Fish Fillet in Red Curry

Ingredients:
  • 600 gms   Fish Fillet
  • 3 tbs          Red Curry Paste
  • 2 tbs          Cooking Oil
  • 500 gms   Coconut Milk
  • 30 gms     Sweet Basil Leaves, Deep Fried
  • 1 tbs          Fish Sauce
  • 1 tbs          Palm Sugar
  • 2 pcs         Kaffirlime Leaves, Finely Sliced
  • 1 pcs         Red Chilli, Finely Sliced

Preparation :
Heat oil in a wok and fry curry paste for app. one minute.
Pour in coconut milk and bring to the boil, add fish fillet. Season with fish sauce and palm sugar.   Arrange on a serving plate and top with curry. Decorate with basil leaves, kaffirlime leaves and chilli. Serves 4
